Salmon with Spinach & Apple Salad



Salmon is a growing favourite in our home. Packed full of good fats, vitamins and protein it is a simple, tasty meal idea which can be easily paired with some great sides.

We love this recipe as not only is it SUPER easy, it is also super tasty and takes less than 15 minutes to prepare and serve and you will probably have all the ingredients already in your cupboard.

Best of all you don't need to use fresh salmon, today most supermarkets sell a range of frozen salmon packs which are individually portioned, so all you need to do it grab them from the freezer! Best of all when we see them on special we stock up, making it a cheap meal option.

Salmon with Spinach & Apple Salad Recipe

Serves 2

Calories: 478 per serve

Protein: 30g

Carbohydrates: 36.5g

Fat: 24.5g

Ingredients:


  • 2 Salmon Portions

  • 60g of Baby Spinach

  • 1 Red Apple

  • 1/3 of a cup of Sultanas

  • 1/4 of a cup of Almonds (or walnuts diced)

Dressing:

  • 1/4 Cup of Natural or Greek Yoghurt

  • 1/2 Tablespoon of wholegrain mustard

  • 1/3 Teaspoon of Balsamic Vinegar

Method:


  1. Season Salmon with a light coating of coconut oil, salt & pepper. Cook until golden brown and the skin is crispy.

  2. Wash, core and cut the apple into small thin pieces

  3. Wash baby spinach and place in a bowl.

  4. Finely chop almonds. Add to the bowl with the apples slices and sultanas.

  5. Add dressing and lightly toss the salad until it is fully coated.

  6. Divide salad mixture on two places. Place salmon on top & serve.

* Dressing:

To the make the dressing, simply add all ingredients into a bowl, and mix until well combined.
