Chicken Wombok Salad
When I think wombok salad, my mind tends to go straight too the traditional Asian crunchy noodle salad; which is one of my favourites. However, it is also not the most healthiest of salads...
Therefore using wombok as my base. I have put together my own protein packed salad, great for a super simple healthy meal.
Ingredents:

Handful of almonds
1/2 a wombox (white end removed)
2 carrots
2 celery sticks
Half an Avocado
1 medium size cucumber
1 can of 5 bean mix
500g of chicken thigh
Dressing:
1 table spoon of sesame oil
2 table spoons of malt vinegar
1 table spoon of lemon juice (fresh or bottled)
Method:



Remove the white end of the wombok and roughly chop into small pieces. Put into large bowl
Peal and grate carrots and add to bowl
Wash celery and dice into small pieces.
Cut avocado in half. Remove seed and using a knife, cut flesh into small cubes. Use a spoon to remove from skin.
Remove 5 bean mix from can. Wash until the water runs clear and add to other ingredients in bowl.
Wash and dice cucumber into small pieces
To make dressing, in another bowl add sesame oil, malt vinegar and lemon juice mix well. Add dressing to salad and mix through until combined.
Roughly chop almonds and sprinkle on the top of the salad
Dice chicken into small pieces. Season with salt & pepper and cook until golden brown.
Add chicken to the top of the salad and serve
